Zucchini Wrap Quesadillas

A quesadilla is a Mexican dish and type of taco, consisting of 2 tortilla’s that is filled primarily with cheese and  vegetables and then fried in a pan. Gluten Free Medium & Large Boxes. 

  • Slice up some mushrooms. Grate or crush 1-2 cloves of garlic.

  • In a bowl, add 3 tablespoons of yoghurt, a squeeze of lemon or lime juice and some chopped fresh herbs of your choice, we like coriander or parsley,  mix it up well, and season with salt and pepper to taste. 

  • Place a pan over a medium heat with a drizzle of oil, when hot fry the sliced mushrooms until golden, in the final 2 minutes, add the garlic. Remove from the pan on completion. 

  • On one of the wraps spread some tomato and chilli jam, top with some slices of cheddar, brie or vegan camembert and finish with the fried mushrooms. Sandwich the other tortilla on top. 

  • Return the pan to the heat and cook the quesadilla on both sides until slightly golden and crispy. 

  • Remove from the pan and cut into quarters. 

  • Serve with a dollop of the herb yoghurt. 

Extra Protein ideas. 

Bacon

  • Place a pan over a medium heat with a drizzle of oil, fry sliced bacon until crispy. Remove from the pan and sandwich between the tortillas before frying. 

Chicken breast 

  • Place a pan (that has a lid) over a medium heat with a drizzle of oil. Pat the chicken breast dry with some paper towel. When the pan is hot, fry the chicken skin-side down until crispy and golden. Flip, pop on the lid, and fry for a further 5-7 minutes until cooked through. Remove from the heat and set aside to rest for 5 minutes before thinly slicing. Lightly season the slices and sandwich between the tortillas before frying. 

Sausage (beef or plant-based) 

  • Place a pan over a medium heat with a drizzle of oil, when hot fry the beef sausage or plant based sausages in the pan on all sides until golden and cooked through. Remove from the pan, cut into thin slices and sandwich between the tortillas before frying.

Add some sliced tomato for some extra freshness!
