Zucchini Fries

These baked zucchini fries are super scrumptious as a side to your burger, or as a snack on their own! 

  • Preheat the oven to 200°C and line a baking tray with parchment paper.

  • Slice some zucchinis in half, then half again, then into quarters.

  • Crack an egg in a small bowl or container and lightly beat it. 

  • Vegan alternative: swop the egg coating with a vegan milk and flour mixture.

  • Place some breadcrumbs in a bowl with your favourite spices, season. Adding some grated hard cheese (a vegan alternative will work) to the breadcrumbs is optional (we highly approve). Stir to combine. 

  • Dip a slice of zucchini in the egg wash/vegan wash and transfer to the crumb. Use your other hand to coat the zucchini in the cheese/breadcrumbs and transfer to the baking tray. Repeat this process until all zucchinis are coated.

  • Bake for 25-30 minutes, flipping halfway through on the cut side. 

  • Serve immediately with some garlic mayo as a  dipping sauce. 

 CHEF’S TIP : 

Make sure your zucchini are dry. If you’ve just pulled them from the fridge before slicing they may start to condensate. Wipe  them with a paper towel before placing in the egg wash to make sure the egg sticks.
