Vietnamese Summer Salad

Seasonal fresh Summer veggie salad with aromatic lemon dressing.

  • Shred some Lenteguer red cabbage and Terra Madre pak choi,  grate the  Naturally Organic carrots and roughly chop some Umthunzi coriander.
  • Finely slice the Neighbourhood Farm spring onion, Umthunzi sweet peppers and the Naturally Organic radish.
  • In a jar with a lid, add 1 grated clove of garlic and a small thumb of grated ginger. Squeeze in the juice of 2 lemons, and add 1 tablespoon of soy sauce, and 1 tablespoon of fish sauce (optional) and a tablespoon of sugar. Shake well until emulsified. Season further to taste.  
  • In a salad bowl toss all the fresh chopped veggies and herbs in the dressing until coated. Garnish with some chopped nuts (we like peanuts or cashews).

You can add of the below protein to make this a more filling meal:

Chicken breast

  • Flatten the Elgin chicken breast between two pieces of grease proof paper with a rolling pin or a bottle until thin and  flat. Place a pan over a medium-high heat with a drizzle of oil (or sesame oil). Pat the chicken breasts dry with some paper towel and season well with salt and whatever spices you desire (we like Thai 7 spice). When the pan is hot, fry the chicken until cooked through and golden on both sides.

Steak

  • Place a pan over a medium-high heat with a drizzle of oil (or sesame oil).Pat the steak dry with some paper towel and season well with salt and whatever spices you desire (we like thai 7 spice). When the pan is hot, sear the steak fat-side down, for 3-5 minutes until the fat is crispy. Then, fry each side for 2-4 minutes, or until cooked to your preference. (The time this takes will depend on the thickness of the steak.)

Tuna

  • Place a pan over a medium-high heat with a drizzle of oil (or sesame oil). Pat the tuna steak/s dry with some paper towel and season well with salt and whatever spices you desire (we like thai 7 spice). When the pan is hot, sear the tuna steaks for 1-2 minutes per side. You want to just sear the outside of the tuna, leaving the centre pink.

Tofu

  • Slice the tofu block into thin strips. Pat the strips dry with some paper towel and season well with salt and whatever spices you desire (we like thai 7 spice). Place a pan over a medium-high heat with a drizzle of oil. When hot, fry the strips until golden and crispy on all sides.

Plant-based meatballs

  • Place a pan over a medium heat with a drizzle of oil (or sesame oil). When the pan is hot, fry the meatballs until golden all over and heated through, turning them as they colour.
