Tofu scramble with flavours of onion, garlic, tomato and herbs. Cooked inside a sweet pepper topped with melted cheese.

Preheat your oven to 180°C. Slice the peppers in half and take out the membranes and seeds. In a large pot, bring water to a boil and add peppers. Cook until just tender. Set aside.

Place a pan over a medium heat with a drizzle of oil, when hot fry some diced onion until soft. Add some grated garlic and cook for another 1-2 minutes.

Crumble the tofu into the pan and cook until starting to brown. Add a cup of chopped tomatoes and some chopped fresh herbs (we like parsley, thyme or rosemary) and cook for another 5 mins. Taste to test and add salt, pepper and sweetener of choice according to taste.

Place the peppers onto a baking tray and stuff the pepper halves with tofu mixture. Top with some grated cheese of choice (or crumble some vegan chevin) and bake for 20-30 minutes until golden and cooked through.

Serve with a simple side salad.
