A mouthwatering mashup of sweet potato, spices, tahini and lemon – serve as a healthy alternative to rice or flat bread (as a side to curry).
Preheat the oven to 180°C. Peel some sweet potato and cut into bite sized chunks. Crush some garlic cloves with a knife.
Spread your garlic and sweet potato, nicely spaced out, onto a baking tray and drizzle with oil. Sprinkle with salt and pepper and roast for 30 minutes – or until tender and easily mashed with a fork.
Allow to cool slightly. Then, add to a blender or food processor and purée those ‘tatos until smooth.
Add some tahini, salt, smoked paprika, cumin and the juice from ½ a lemon. Blend well.
