Sweet and Sour Mushroom Stir Fry

This very quick, simple and colourful stir fry dish is made up of a mix of crunchy and juicy veggies – in a sweet n sour sauce.

  • Heat a pan with a drizzle of olive oil and sauté some sliced mushrooms with turmeric, chilli powder and salt until caramelised and soft. Set aside.

  • Place the same pan with a drizzle of oil over medium heat, add the 2 cloves of minced garlic and a knob of minced ginger to the oil and sauté for two minutes. 

  • Add 1 wedged onion, 2 grated carrots, 1 sliced pepper and 3 wedged tomatoes to the pan. Sauté until the peppers turn slightly soft over medium heat. 5-10 minutes. 

  • Pour in 4 tablespoons of tomato sauce, 2 tablespoons of soy sauce, 2 tablespoons of oyster sauce and 1 teaspoon of chilli flakes (optional) and cook over medium heat, 5-7 minutes. Once the onion and peppers turn soft with the sauce mixture, add the mushrooms to the pan. Cook until the sauce is thickened.

  • Season to taste. Serve with cooked rice, and garnish with some chopped coriander and a dollop of yogurt of your choice.


You can add animal protein to this dish. Cubed fish or chicken would work very well here. Simply stir through in the final few minutes until cooked through.
