This authentic spicy green bean stir fry will transport your taste buds straight to Sri Lanka. It’s the perfect dish for a light flavourful lunch.

Trim the ends of a handful of green beans then cut them in half.

Place a pan over medium heat with a drizzle of oil, when hot add 1 large sliced onion and cook for 3 mins until the onion starts to turn soft and translucent.

Add a couple of curry leaves, 2 cloves of sliced garlic, 2 sliced chillies, ½ a teaspoon of turmeric, salt and cook for 2 minutes until fragrant.

Add the beans to the pan and combine all ingredients together over medium heat for 5 minutes.

Pour in ½ cup of water and simmer for further 5 minutes until the water completely evaporates.

Add ½ a teaspoon of curry powder, 1 a teaspoon of chilli flakes and reduce the heat to a low temperature and cook for another 5 minutes until all ingredients are combined well. Season to taste.

Serve warm and garnish with some fresh coriander.
CHEF’S TIP
Serve with a dollop of yoghurt (plant-based yoghurt works too) and a big spoonful of mango atchar or your favourite chutney.
