Roasted Grape and Cheese Crostini

Roasted Grape and Cheese Crostini

Balsamic roasted grapes on a sourdough croute with paneer cheese (or your prefered cheese of choice).

  • Preheat the oven to 200°C.

  • In a bowl, toss all the grapes with 2 tablespoons of balsamic vinegar, 2 teaspoons of olive oil, and ½ a teaspoon of sugar.

  • Place onto a baking tray and bake for about 30 minutes, giving the pan a shake every 5 to 10 minutes to avoid burning the sugars.

  • Once the grapes are out of the oven, change the oven setting to grill. Slice the sourdough into crostini size and drizzle with oil.

  • Place the bread on a single layer under the grill and cook until crispy and golden.

  • In a pan over a medium heat with a drizzle of oil, fry the paneer slices until golden on each side.

  • Layer up your crostini with fried paneer and roasted grapes. Garnish with fresh herbs – rosemary works great here!

This dish also works extremely well with goats cheese, camembert cheese, halloumi or a soft vegan nut cheese.
