Mediterranean Lentil Bowl with Creamy Mustard Dressing

This delicious and nourishing bowl is chock full of healthy veggies atop earthy lentils at its foundation.

  • For the lentils: Rinse the lentils in a sieve. While rinsing, make sure to pick out any bad lentils, debris or small stones which can sometimes sneak in. 

  • Add water and lentils in 4:1 ratio to a pot. Bring the pot to a boil, then reduce to a very low simmer, cover and set your timer for 20-30 minutes. The cook time will vary slightly based on the variety: (green lentils: 18-20 minutes, lentils du puy: 25-30 minutes, brown lentils: 20-25 minutes, black lentils: 25-30 minutes) 

  • Drain the water from the lentils, and set aside. 

  • For the bowl: Make a dressing of your choice, we like to combine about 30ml of (vegan) mayonnaise, 15ml of finely chopped onions, 15ml of water, 15ml of lemon juice or vinegar, some chopped fresh herbs of your choice, and a little mustard in a small bowl and set aside. Season to taste, balancing the ingredients to suit your taste. 

  • Place some lentils in a serving bowl. Top with toppings of your choice, we suggest a halved boiled egg (optional), some steamed green beans, some sliced sweet peppers, some diced tomato, and some sliced olives. Drizzle with the  dressing and season to taste. Enjoy!
