This delicious spiced mango pickle makes the perfect zingy side to any meal!
Chop up some mango into small cubes and place into a bowl.
Pour over some rice wine or white wine vinegar to cover your mango, add some sugar, a touch of cinnamon, some cumin, finely chopped chilli, salt and pepper.
Allow to pickle for at least 10 minutes before serving. Delicious!
Use mango that is slightly unripe as it holds its texture better.
