Mango & Apple Tartare

Mango & Apple Tartare

This Mango & Green Apple Tartare is the perfect starter for your summer menu. You might think this sounds more like a dessert, but this dish has savory flavors that make it the perfect starter or main course on a hot summer day.

  • Finely dice up 1 mango and 1 apple. Add both to a bowl.

  • Roughly chop some herbs of choice – we love coriander, parsley or mint here. Finely dice ¼ onion, and add both to the bowl.

  • In a separate bowl, mix 15ml of tamari, 15ml of oil and 45ml of lime or lemon juice, pour everything into the bowl with the mango and apple, mix, making sure that everything is nicely coated.

  • Leave for 30 minutes, then taste and maybe season with some sea salt and black pepper.

  • Finely slice your bread of choice. Place the bread under the grill with a drizzle of oil and cook until crispy and golden, or simply toast up in the toaster.

  • Top your bread croutes with the marinated tartare and add a little blob of vegan garlic mayo.

  • Garnish with fresh herbs, and dig in!

For this Mango & Apple Tartare the key is ripe and juicy mangos. Therefore make sure they have the right quality or you will be missing the fun in this dish. Mangoes are also very healthy. Since they have lots of pectin and fiber they keep you filled for a while and further add a nice dose of vitamin c to your diet.
