Shake it up with this easy and delish mango and banana pudding to make for a gathering of family and friends.
- Peel and roughly chop some mango and banana. Blend with sugar and lemon juice (to taste) until smooth. Measure out the puree to 2 cups.
- Add 2 cups of cow's or plant based milk and 2 teaspoons of agar-agar to a small pot and whisk them together. Then bring to the boil, whisking regularly. Once boiling, reduce the heat slightly and simmer for 3 to 5 minutes until the agar-agar is dissolved completely.
- Add the fruit puree and whisk until the mixture is even and smooth. Turn the heat off. Taste the mixture and adjust the taste by adding sugar and or lemon juice.
- Quickly pour the pudding into the serving bowls. Chill the puddings for 4 hours in the refrigerator before serving.
Enjoy this treat with sliced fruits – garnishing with fresh mint.
