In a Good Pickle

A quick and easy way to add a different flavour profile to any much-loved side.

  • Add a teaspoon of salt, granulated sugar, mustard seeds, and peppercorns along with 2 roughly chopped cloves of garlic to a small pan. Add 100ml of apple cider vinegar and 200ml of water – bring the mixture to a simmer until salt and sugar have dissolved completely. Take off heat and allow it to cool fully.
  • You’ll now need a clean jar or container. Add any harder fruit or vegetable - onion, avocado, cucumber, carrot, peas or radish to your clean jar or container, cover in the pickling liquid and leave for at least 10 minutes or up to a few weeks. Remember, the longer you leave it the stronger the flavours!


Swap the sugar for honey or another sweetener if you’d prefer!
