Fried Mango

A spicy little addition to a salad or as a sambal.

  • Chop 1 mango into 1cm sized cubes (don't waste any mango, you can chuck in the awkward sized bits too).
  • Add roughly ½  a teaspoon of black mustard seeds, sprinkle chilli flakes, and a ¼ teaspoon of turmeric. Fry in a drizzle of oil and  be sure to use a non-stick pan so you can let the bottom get sticky and crispy and easily scrape it off.

NUTRITIONAL BENEFIT:

Mango flesh contains prebiotic dietary fibre, which helps feed good bacteria in the gut.
