A spicy little addition to a salad or as a sambal.
- Chop 1 mango into 1cm sized cubes (don't waste any mango, you can chuck in the awkward sized bits too).
- Add roughly ½ a teaspoon of black mustard seeds, sprinkle chilli flakes, and a ¼ teaspoon of turmeric. Fry in a drizzle of oil and be sure to use a non-stick pan so you can let the bottom get sticky and crispy and easily scrape it off.
Mango flesh contains prebiotic dietary fibre, which helps feed good bacteria in the gut.
