This classic French dish is the perfect meal for a windy day to make your frown turn upside down.

Quarter the mushrooms. Finely slice up 1 onion. Heat some oil and/or butter together in a large pan. Add the onions and 1-2 cloves crushed garlic and fry until golden brown. Stir in some chopped thyme and cook until fragrant. Stir in about 2 tbsp flour and cook for 2 minutes.

Add 1-2cups of stock and bring to a boil. Simmer gently until the sauce has thickened.

Add the mushrooms to the pan and cook for about 5 minutes until soft. Season to taste. Transfer to a covered heatproof dish.

Cut some baguette (or your bread of choice) into thick slices. Rub each slice with a cut clove of garlic. Top each piece with a slice of brie or vegan camembert.

Place the baguette slices on top of the mushroom mixture and place under a hot grill for about 5 minutes until the cheese melts or the bread is crisp.
