French toast & fig - is there a better combination?

Choose your bread, and slice it up about 1 cm thick. Spinach Bread will work too.

Break a couple eggs into a shallow bowl and add 1 tablespoon of milk per egg. Beat well to combine.

Place a nonstick pan over medium-high heat with a generous knob of butter, tilting the pan to evenly coat.

Dip the slices of bread in the eggy mixture. Then, fry in the hot pan for 2-3 minutes on each side until they start to caramelise and turn brown. Depending on the quantity you are making, create more egg mixture as needed.

Plant-based option: Spread some vegan butter on both sides of the bread and toast in a hot pan.

Serve your french toast with a dollop of yoghurt/coco yogurt, some slices of sweet fig, and a scattering of nuts of your choice, we like to use walnuts or pecan nuts.

For even more indulgence, grate some chocolate/vegan chocolate over the top of the slices to finish them off. OR a little sprinkle of cinnamon could do.
FUN FACT:
Did you know? Figs are actually inverted flowers, meaning that they bloom inside of the pod itself. Eventually, the flower matures and turns into the fruit we consider to be a fig!
