Creamy Ricotta (or Chevin) & Banana Pots

This creamy dessert with ricotta/chevin cheese, banana and mint is a refreshing and delicious treat. 

  • Place some ricotta of plant-based chevin in a bowl, add some icing sugar (enough to sweeten to your preference) and some grated lemon zest and mix perfectly with a spoon. Whip some cold yogurt/coco yogurt and add it to the ricotta/chevin mixture with slow and delicate movements. Transfer to the refrigerator for at least an hour. 

  • Peel and cut a banana into half-moon slices. Add a little lemon juice to prevent them from turning black. 

  • Spread the bananas in the bottom of some glasses. Layer the ricotta/chevin mix on top of the bananas. Garnish the surface of each creamy dessert with a drop of maple syrup and chopped fresh mint. Transfer to the refrigerator.

  • When ready to serve, remove the creamy dessert from the refrigerator and bring it to the table.

 CHEF’S TIP: 

Fresh bananas are available year-round. Unlike some fruits, bananas continue to ripen after picking. Bananas will ripen steadily at room temperature. To ripen faster, people can try keeping them in a paper bag. Refrigerated bananas will ripen more slowly. The outer peel of the banana will darken in the fridge, but the banana itself will stay intact longer.
