Breakfast Toastie with Tofu & Golden Eggplant

A delicious morning toastie to get you out of bed – with fried golden tofu, caramelised onion, and soft aubergine on sourdough.

  • Slice some onions and slice up some freshly baked bread of choice.

  • In a pan over medium heat, fry the onions in some oil slowly until caramelized, stirring occasionally, about 5-10 minutes. Season to taste, and remove from the pan. 

  • Slice up some aubergine about 1cm thick. Fry the aubergine slices until golden and soft, about 3-5 minutes per side. Remove from the pan and season to taste.

  • Pop your slices of sourdough into the toaster until warmed and golden – or toast ‘em in the pan if you’re feeling gourmet. 

  • Slice up some tofu and fry the sliced until golden on both sides and heated through. 

  • Spread your favourite sauce on your sourdough slices. Add your aubergine, caramelized onions and fried tofu and put the other slice of toast on top. Take a bite! Now you are ready to  take on a brand new day.


Any bread of choice will do, but It is worth noting that one of the benefits of fresh sourdough bread is that it has a longer shelf life than typical store-bought bread. It can typically last for about 4 to 5 days at room temperature. Whatever you do, please do not refrigerate your bread.
