Aubergine “Pizzas”

Aubergine steaks make a great alternative to the conventional pizza bases!

  • Preheat the oven to 180°C. 

  • Grate a couple handfuls of mozzarella. Slice a couple of tomatoes into thin slices. 

  • Cut some aubergine into 2cm thick slices. Brush each side of the aubergines with olive oil. Heat a grill pan to medium heat. Grill the aubergines until they have just started to char but are still firm. You don’t want to over cook them at this stage. Once they are grilled set them aside on a baking tray. 

  • Start adding the layers of toppings to the aubergine slices, starting with a thin layer of tomato pizza sauce, then add the grated mozzarella. Layer on some fresh herbs and tomato slices.

  • Bake for about 15 to 20 minutes or until the cheese and sauces start bubbling and are turning brown. 

  • Drizzle with olive oil and season with salt and pepper and serve with a simple mixed green salad or just some fresh rocket leaves scattered over the top.

 CHEF’S TIP: 

The aubergine pizza can be adjusted for the meat lover by adding strips of cooked bacon to the stack!
